Forget the stuff made from soap shavings and lemonade from the corner shop - beloved by book clubs - this is real Prosecco, the kind the old folks of Treviso used to drink. 'Why is it cloudy', I hear you ask? Well it’s a natural wine, made from 100% Glera, unfiltered, fined, clarified or injected with Co2 in tanks by bicycle pumps! The secondary fermentation occurs in the bottle – at Easter before the temperatures rise - so the yeasts remain. Shake it or invert it, like a snow globe, to add texture and spice. Its light bodied, with notes of flowers, fruit and freshly baked bread. If cloudy cider floats your boat the appley acidity will make you smile.
