Fino in a half bottle with a screwcap? Here’s why; Fino is a unique and delicate wine whose salty freshness dissipates rapidly if left open for a long time, especially under cork. It should be drank chilled, like all white wines, and consumed in under 6 hours – although you will struggle to keep your mitts off it for that long.


This delicious example comes from Bodegas Sanchez Romate in Jerez. Established over 200 years ago, the firm has an illustrious past, appointed Official Purveyors to the House of Lords in 1909 and shortly thereafter as Official Purveyors to the Sacred Apostolic Church of the Vatican. Sherry doesn’t come any cooler than that – get on board you hipsters.
