Vermouth di Torino, Storico, NV, Giulio Cocchi

This original, 120 year old recipe of Giulio Cocchi of Piemonte, describes itself as falling into the sweeter, amber vermouths, although it’s tell tale bitterness sets it apart. The use herbs such as cinchona and rhubarb together with the addition of sugar, browned on a fire, emphasizes its gorgeous mahogany tone. Artemisia and citrus are added for a classic bitter and citrusy note. Sandalwood, musk, myrrh and nutmeg are married with a lovely balsamic finish.

Sounding more like a perfume than a wine, I love it on its own, with ice and lemon rind, but a Negroni would be naked without it.
