César Florido has single-handedly rescued this style of wine from extinction. His Moscatel Pasas is made from hand selected grapes that are dried on fields of sand, for two to three weeks, in the warm sunshine to concentrate their flavours. Fermentation is stopped by the addition of neutral grape spirit and the wine is aged in solera for nine years prior to bottling. Sweet, sticky, incredibly complex with a melange of dried fruits, roasted nuts, vanilla, caramel and spice. Woohoo!

Carpano’s Antico Formula is as good as it gets. And if you really like your Vermouth comes in litre bottles! It’s made from a recipe dating back to the late 1780’s, in Turin by Benedetto Carpana, and the daddy of all red vermouths. On its own, it has a complex nose of vanilla, raisins, stewed prunes, and citrus zest. Initially sweet, it becomes increasingly bitter and more aromatic in the glass. In cocktails it’s a revelation. Manhattans are gorgeous and a Negroni takes on a whole new dimension. Try it, over ice, with a dash a dash of orange bitters and top the glass up with Prosecco
