The Andert barrel cellar is no-tech rather than lo-tech. There is no electricity, so tasting is done by candle light! The wines are made naturally with varying amounts of skin contact and maturation is in old barriques and 500 litre barrels. Manual harvest, destemmed grapes, fermented in open-topped containers, and maceration 5 -11 days before pressing. Ferments are with indigenous yeast and are ambient (the garage door is opened or closed). The wine matures gently and the goes through natural malo, a light filtration, no fining – with sulphur only added at bottling The Pamhogna white is 55% Rulander (Pinot Gris), 40% Neuberger and 5% Weissburgunder. It has an intense golden-yellow colour, a lovely herbal fragrance and requires some breathing before all the elements harmonise – from the exotic white pear and pineapple fruit aromas to the refreshing acid, fine structure and a gentle clasp of tannin. If you love it as much as we do, it's also available in magnums!

Tenuta Grillo, Pecoranera Nera VDT 2004

Pecoranera or 'Black Sheep' comes from the Tenuta Grillo Estate in Monferrato, Piemonte. It's a fully organic blend of Friesa, Dolcetto, Barbera and Merlot, with a long maceration on skins, natural yeast ferment, extremely limited use of sulphur, extended ageing in large barrels (so that oak does not dominate) and bottled without filtration. The wine is inky black, and funky at first sniff, as it’s been in a bottle for over a decade - so decant it or allow it to breathe until its true aromas of damsons, forest fruits, wild herbs, mushrooms and liquorice come to the fore. Chunky as well as funky, it deserves some top quality, well hung, game.
