Chinuri, skin contact, Pheasants Tears, Georgia

I first came across this wine, not in Georgia, as you might expect, but in a swish wine bar in Barcelona, and loved it so much I felt compelled to track it down, so I could taste it again. Now some wines don’t do the same thing in different contexts, but this was an exception, and was equally at home in my kitchen. This is Chinuri, fermented in qvevri – a baked red clay, coil pot, buried in the ground – with around one months skin contact. It’s a white wine with tannin, but if you are looking for an easy way to understand 'amber' or 'orange' wines this is it. It’s lean and angular, with a distinct stone sucking quality, a little honey, a touch of spice and pear, cut through with a rapier-like purity.
