Judith Beck’s vineyards, near Gols in Austria’s Burgenland, are fully biodynamic. The aim being to strengthen the natural resistance of the vines and produce grapes with maximum physiological ripeness. ‘Ink’ is made from 80% Zweigelt and 20 % St. Laurent, Fermented spontaneously, without the use of yeasts, in stainless steel tanks, giving a vibrantly fresh and nervy raspberry -fruited red just made for guzzling.
Remember the taste of old school white Rioja? Kind of like lemon tea aged in oak, some would say. Well this takes you way back - except there’s no oak – and there’s no better wine with salt cod or hake. This is seriously experimental, so much so that, only one 1000 litre tankful was made. Whole berries, skin contact and maceration, wild yeast fermentation, no fining and no sulphur – a true ‘orange wine’. Tangy, tart and very refreshing, you can feel it doing you good. A word of warning though, this is very much a food wine. But if you don’t feel like cooking, just grab a handful of almonds and some slivers of Serrano ham.
