'Sapa, Sapa Ravi'.... as the Lady Gaga song may have gone had she had a few glasses of this with some morsels off her meat dress! This is just one of Georgia's ancient grape varieties - they have over 500 species - and as good as any place to begin. Deep in colour, fermented in clay amphora or qvevri, lined with beeswax and buried underground, with 6 months maceration on skins with stems, juice and pips in the mix, this is bold, earthy and dry with chunky blackcurrants and firm natural tannins for people who like to sleep out under the stars.
