Zurab Topuridze’s winery is in the village of Dablatsikhe in Georgia’s Guria region. Guria lies in the western reaches of Georgia, bordered by the Black Sea, where I once lost a shoe. But forget shoes, I’m talking Saperavi, the most winey of red wines – unlike most red grapes, the pulp, and juice, of Saperavi run red, like blood. Bold and earthy, honest, steadfast and true with a myriad of flavours, ranging from black cherry, blackberries, marzipan, a dash of star anise and more than a passing resemblance to Pinot Noir - sapid is as sapid does, lets open another !
