'La Boheme' Melon Blanc, La Senechaliere, Marc Pesnot, 2016

Folle Blanche, or Melon de Bourgogne, from 60 to 80 year old vines, with a pure, natural expression from the schist terroir. The fruit undergoes a slow manual pressing before resting on its lees for 9 months. Cloudy, floral and delicious, with no additives and notes of wild flowers, hay, pear, green apple and pounded stones. Marc Pesnot ferments his juice for up to 6 months on wild yeasts – 8 days is the norm for commercial wineries – which gives you some idea as to why this wine is so very different.
