The food of Sicily is Arab in origin and flavour. The Saracens brought, aubergines, peppers, artichokes, jasmine and citrus fruits - particularly lemons - to the island from North Africa, and the cuisine is still predominantly vegetarian. A robust red is needed to compliment the scrumptiously roasted, garlicky, herby and rustic nosh - with enough acidity to cut through the lush, vibrantly green olive oil - and this is it!
