Mix it up
A rich elegant white from Italy's Langhe hills, broad, lush, rich and spicy with pears, almonds, fresh cream and a lively, zesty, spritz on the tongue. From Ascheri in Bra, this is, in bybo's opinion, the finest white grape in Piemonte. Complex and concentrated on the mid - palate it goes well with scrambled eggs with a drizzle of white truffle oil.
Good Cahors should be inky, rather than black, with a dash of medicinal iodine and jam packed with deep, late summer fruit. Expect touches of fig and liquorice, a lash of spice and tar, and a smattering of herby pepperiness. It’s subtle rather than powerful, classy and understated with a touch of astringency and a lingering acidity to cope with the confit and cassoulet!
